Harvested from the organic Zabala Vineyards in Arroyo Secco AVA. Right on the dry riverbed of the valley, these grapes are filled with bright fruit flavors and punch acidity. Harvested at 21.5 brix and 3.2 pH with 2.2 g/L of malic acid.
After arriving in Gilroy, the grapes were hand-sorted by winemaker Quinn Hobbs and pressed into a flex tank eggs tank where they stayed for 30 days before being racked off lees. Bottled at 15 ppm of SO2 with 2.2 g/L of malic acid and 3.2 pH.
Alison, Quinn, and Mina Hobbs are the proprietors behind Hollow Wines. Alison was born in raised in Margaret River, Australia. She developed her passion for wine at an early age. Quinn, a Central Coast native, journeyed to Alison's hometown to learn the craft of sustainable winemaking. Quinn is dedicated to his minimal intervention winemaking approach, expressing the grapes' true terroir while remaining 100% vegan and sustainable.
