This sparkling wine from world famous Emilia-Romagna comes from extremely old vines (80-100 years old) that grow right next to the Adriatic Sea. The area is salty, sandy, windy, but also receives a great balance of fog and sun - the end result is a stunning pet-nat with nice bubbles, bone dry, lots of sea salt and tart red cherry. Drink on its own or pair with seafood starters and shellfish. Ideal as an aperitif.
