In 1998, Laetitia Ourliac and Rodolphe Gianesini stumbled upon a forgotten 18ha vineyard and decided, “Why not learn the art of winemaking?” Six years and a lot of wine-fueled study later, Domaine Fond Cyprès was born in 2004. Nestled in Escales, the northernmost corner of the Corbières AOC, their wines are a love letter to the local terroir. When they’re not making wine, they’re busy growing olives, tomatoes, eggplants, and wild herbs. With calcareous soil, cooling “vent cers” winds from the northwest, and the Mediterranean’s humid breath, this is where nature and passion collide in every bottle.
Destemmed, cofermented for four weeks in concrete. Aging: Syrah - 9-10 months in old barriques, Grenache - 9-10 months in old Burgundy barrels, Carignan - 12 months in demi-muids.
